Time for another cookery post. As there’s not much cooking going on these days (yes, I am still in the Caribbean, and yes, this vacation seems to go on and on and on), I am going to spoil my lovely readers with Leroy’s Banana and Mango Margarita. Try this at home:
Leroy's workplace. Jealous? Moi?
½ banana
Piece of a mango or 1 oz mango juice
1 oz lime juice
1 oz Cointreau
1½ oz tequila
Blend with ice and serve in a martini glass with salted rim.

OMG – am sooo jealous! Last time I was in that part of the world, I drank mainly Dark & Stormies (rum & ginger ale) – have you tried it? Only tastes good in the Caribbean!
