Banana and strawberry overnight oats

If you, like me, fancy a filling, healthy breakfast that’s so good it could easily pass as pudding, yet you are not enough of a foodie to let go of the snooze button, I’ve got just the thing for you:

Overnight Oats

I don’t know what took me so long, but I am head over heels with the double Os. They are nutritious, easy to prepare the night before (as the name suggests) and come in a plethora of flavours and variations. Strawberry and banana is a classic combination, but you could easily replace the berries for any other variety of soft fruit. To feed a family of four:

1.5 cup oats

1 cup almond milk (or any other milk)

1 cup yoghurt (of your choice)

1 ripe banana in slices

2 cups strawberries (or any other soft fruit)

2 tbsp chia seeds (optional)

The night before, mix yoghurt and milk, then stir in chia seeds, oats, banana and half of the berries. Cover and pop it in the fridge. The next morning, give it a little stir and add more milk if desired. Garnish with the remaining berries and drizzle with a teaspoon of honey per portion, if you like it a little sweeter. Et voila – breakfast is served!
